From the moment you enter Smoke Signals restaurant in Lake Placid it is obvious that just about every seat is the best one in the house. You’ll of course want to take in the view of Mirror Lake, visible from nearly every table through the floor-to-ceiling glass wall. But also take in the architectural details, the interesting finish work and the art. This isn’t just some barbeque joint. What the gastro-pub has done for a burger and fries, Smoke Signals has done for barbeque.
Owners Jason Stoltz and Layla Wolfberg recently celebrated the first anniversary of the business opening, and are working hard to build on their initial success. Their vision is to combine classics, like ribs, pulled pork and brisket, with more unique items to keep both staff and guests excited and coming back for more. “We change our menu seasonally, and utilize fresh, local flavors and ingredients,” they explained. “Every single item, from our buttermilk cornbread, to salad dressings, to our various rubs and sauces, is made in-house and entirely from scratch. Maintaining high quality and consistency has been our main focus since our opening.”
Jason grew up in the restaurant industry, working for his mom in her gourmet pizza place in Delaware. The couple, who met in the Washington, D.C. area, have built their relationship around cooking together. Their passion for BBQ began at a D.C. restaurant called Rockland’s, and the couple continued to seek out barbeque, visiting kitchens and talking to pit masters. When they were ready to leave D.C., they immediately thought of Lake Placid, where Jason’s father had a vacation home. “We settled on BBQ as the core cuisine for our restaurant because it was something we both loved to eat, and because at that time, there were no BBQ restaurants here,” Jason said. “Layla and I developed many of the recipes, but our kitchen is a true team. Various staff members also develop recipes and dishes that have become staples too.”
